Literally, Quesadilla mean “little cheesy thing”; originating in Mexico sometime around the 16th Century. Start with corn or flour tortillas, cheese and a wide range of any condiments you can think of.
Quesadillas
Another perfect build your own style meal to suit your taste and carb count. Many of the condiments can be made fresh or come from the pantry. Use beef and Taco Seasoning to make a taco style filling or chicken tossed with some spices, peppers and onions. They are also great vegetarian style. Ingredients
- Corn or Flour tortillas: CHO based on your product
- Beeef Taco Seasoning
- Oil or cooking spray
- Grated Cheese, any type
- Jalapeno Crema
- Jalapeno stuffed olives or black olives
- Pico de Gallo or Salsa
- Sour cream
- Avocado or guacamole
- Red Peppers, thinly sliced
- Fresh or pickled jalapenos, sliced
- Onions, green or red finely diced
- Fresh limes
- Cilantro
Instructions
- Heat non-stick pan with a little oil or cooking spray.
- Place tortilla in heated pan. Add grated cheese and any desired condiments. Place second tortilla on top and let cook over medium high heat until bottom tortilla is brown and cheese melting.
- Carefully flip quesadilla and cook until second side is golden.
- Cut into quarters and serve immediately.
