Cherry Crumble

This cherry crumble is everything a crumble should be, a wonderful combination of textures and bursting with flavour. And its Gluten Free to boot! An easy summer dessert perfect for entertaining or as a casual family treat. Personally, I think it goes best with a giant scoop of vanilla ice cream, but its still great on its own.

Cherry Crumble

Ingredients

  • 455 g Fresh Pitted Cherries, cut in half 63 CHO
  • 1 tsp Gluten Free Baking Stevia 1 CHO
  • 1 tsp Granulated Sugar 5 CHO
  • 6 g (1.5 tsp) Cloud 9 Gluten Free Baking Mix 4 CHO
  • 1 tsp Vanilla
  • 1/4 tep Almond Extract

Crumble

  • 45 g (~1/2 cup) Gluten Free Oats 27 CHO
  • 36 g (~3 tbsp) Brown Sugar Splenda Blend 36 CHO
  • 38 g (~1/4 cup) Cloud 9 Gluten Free Baking Mix 27 CHO
  • 20 g (~1/4 cup) Sliced Almonds 2 CHO
  • 58 g (1/4 cup) Butter
  • 1/2 tsp Almond Extract

Instructions

  1. Preheat oven to 350. Grease a 9" cake pan or glass baking dish.

  2. Place halved cherries in a large bowl. 

  3. Add stevia, sugar, and flour. Stir to coat. 

  4. Add vanilla and almond extract. Stir to combine.

  5. Pour cherry mixture into the baking pan.

  6. In a medium bowl combine the oats, brown sugar splenda, flour, and almonds. Stir to mix.

  7. Add almond extract and butter. Using a pastry knife, fork, or your hands roughly incorporate into the dry ingredients. It should not be completely mixed and will remain "crumbly". 

  8. Sprinkle the crumble mixture over the cherries.

  9. Bake for 20 - 30 min, until cherries and bubbling and crumble has turned a golden brown.
