Sautéed Green Beans

Green Beans have been harvested for centuries in South and Central America. Christopher Columbus brought them to Europe on his second excursion. And before that they were merely decorative in Europe and inedible.

Sauteed Green Beans

Instead of steaming or boiling beans, try sauteing in a little olive oil.Green beans will turn a vibrant green as they heat up. How el dente you like them is up to you.

Ingredients

  • 1 cup (100 gr) green beans, trimmed 3 CHO
  • 1 TBSP olive oil 0 CHO
  • Salt and pepper 0 CHO

Instructions

  1. In a pasta sized bowl toss the beans and olive oil. Mix well.
  2. Heat a skillet and add the beans.
  3. Lightly salt and pepper the beans while cooking over medium heat.
  4. Cook until the texture you prefer and season if desired. We like el dente, so 5 – 6 minutes is plenty. Others in the family prefer 10 +.
  5. Serve immediately.
