Tomatoes fresh from the grower and Persian cucumbers elevate this salad to the summer entertaining rotation. Persian cucumbers are smaller and sweeter than English.
This salad is a snap to make and serve alongside or on top of Aleppo Pepper Meatballs and Hummus.
Simple Tomato and Cucumber Salad
Pictured is half a recipe for Hummus (243 gr), topped with Aleppo Pepper Meatballs and Simple Tomato and Cucumber Salad.
If making this platter for a crowd, use the entire recipe of Hummus and spread on a larger serving plate.
Add more Aleppo Pepper Meatballs and top with the Salad, single or double batch depending on your group.
Ingredients
- 1.25 cups (150 gr) cherry tomatoes, chopped 4.5 CHO
- 1 large (100 gr) Persian cucumber, chopped 3 CHO
- 2 TBSP (15 gr) red onion, finely chopped 1 CHO
- 1 TBSP olive oil 0 CHO
- ¼ cup (6 gr) parsley, finely chopped 0 CHO
- 9 Kalamata olives sliced (1 CHO/3 olives) 3 CHO

- 11.5 CHO DIVIDED BY 299 GRAMS = .038 CHO/GRAM
- ¼ CUP = 38 GRAMS (.038 CHO x 38 GR) 1.44 CHO/1/4 CUP

Instructions
- Chop tomatoes and cucumber into small pieces, add finely chopped onion and olive oil.
- Next add parsley and sliced olives. Stir to incorporate and serve within 30 – 60 minutes.
- *Can be made ahead but may lose some of its crunch.
