Burrata with Slow Roasted Tomatoes

Burrata and Fresh Mozzarella appear the same until you slice into it. Burrata’s centre is filled with fresh cream and curds, whereas Mozzarella’s interior is the same as the exterior.

Burrata with Slow Roasted Tomatoes

Slow Roasted Tomatoes are simple to make and absolutely delicious. Make them earlier in the day and let rest at room temperature. They are very delicate so remove gently with a spatula to the serving platter.

Warm some Castelvetrano olives if you wish for the plate.

Because of the rich, creamy filling; Burrata is very low in Carbs. 1 CHO/30 gr.

Slow Roasted Tomatoes are also low Carb.

Serving size and the size of your tomatoes (cherry or grape) will determine the exact Carb count.

Ingredients

  • 1 (250 gr) large ball Burrata 8.33 CHO
  • 1 recipe Slow Roasted Tomatoes 9 CHO
  • 1 TBSP finishing olive oil
  • Pepper if desired
  • Garnish with fresh Basil/any herb you have on hand
  • *Any fresh Italian bread/ciabatta

Instructions

  1. Slow Roast Tomatoes earlier in the day and let rest at room Temperature until ready to serve.
  2. 1 hour prior to serving remove the Burrata from the container and water. Gently rest on paper towel on a small plate until ready to serve.
  3. Place Burrata on the serving platter and with a spatula arrange tomatoes around it.
  4. Add some olives if desired.
  5. Drizzle with a really good finishing olive oil and black pepper if desired.
  6. Serve with the best, freshest Italian bread/ciabatta you can find. CHO will depend on your product and serving size.
