Winter Salad

Use our Summer Salad Dressing recipe or a premade good quality fruity dressing. Just pay attention to Carbs.

Our Farmer’s Market has some wonderful premade dressings that we use in a pinch.

Ingredients

  • 6 – 8 cups (177 gr) Romaine lettuce 0 CHO
  • ½ small (69 gr) Granny Smith Apple, with skin 7.8 CHO
  • ¼ cup (37 gr) Pomegranate seeds 6 CHO
  • ¼ cup (40 gr) Dried cranberries 30 CHO
  • 1/3 cup (50 gr) Whole Walnuts 13 CHO
  • ½ cup (90 gr) Feta Cheese, crumbled 0 CHO
  • 1 recipe Summer Salad Dressing 7 CHO

TOTAL CHO 63.8 CHO

  • TOTAL WEIGHT 517 GRAMS
  • 63.8 CHO DIVIDED BY 517 GRAMS = .123 CHO/GRAM

4 EQUAL SERVINGS = 2 cups (130 GRAMS)

  • (.123 CHO x 130 GRAMS) = 15.99 CHO PER SERVING

8 EQUAL SERVINGS = 1 CUP (65 GRAMS)

  • (.123 CHO x 65 GRAMS) = 8 CHO PER SERVING

Instructions

  1. We have eaten leftovers the next day, because romaine lettuce will hold up a bit better than some other lettuces. It is best eaten the day it is made.
  2. Cut or rip lettuce and rinse with a salad spinner. Let dry on a towel until mostly dry.
  3. Cut pomegranate in half and bend to remove seeds.
  4. Toss lettuce with dressing of your choice, then add the remaining ingredients, topped with pomegranate.
