Turkey Meatloaf

A family favorite, really easy and flavorful. We have included both Gluten and Gluten Free versions. The trend now is to shape the meatloaf on a sheet pan so more of it browns. Add potatoes and vegetables if desired or serve with a salad. This recipe doubles well, just shape into 2 loaves or increase cooking time to 1 hour. Rice bread crumbs are denser so we use ¼ cup GF vs 1/3 cup Panko, however, the overall carb count is very similar for Gluten and Gluten Free.

Gluten Free Turkey Meatloaf

  • 1/4 cup (30 gr) Minced onion 3 CHO
  • ¼ tsp. Minced garlic 0 CHP
  • 1 TBSP Olive oil 0 CHO
  • 2 TBSP Ketchup 8 CHO
  • 2 tsp. Worcestershire 2 CHO
  • ¼ cup (35 gr) Rice bread crumbs 19.25 CHO
  • 1 Egg 0 CHO
  • ¾ tsp. Marjoram 0 CHO
  • ½ tsp. Thyme 0 CHO
  • ½ tsp Salt 0 CHO
  • ¼ tsp. Pepper 0 CHO

TOTAL CHO 32.25 CHO

  • 32.25 CHO DIVIDED BY 510 GRAMS = .063 CHO/GRAM

Instructions

  1. Pre heat oven to 350. Line baking sheet with tin foil.
  2. Heat olive oil over low heat in sauce pan. Add onion and garlic; cook until translucent, about 5 minutes.
  3. In a small dish mix ketchup and Worcestershire. Add to onion mixture and heat to a simmer.
  4. Meanwhile mix all remaining ingredients in a bowl, then add onion mixture. Stir well to incorporate.
  5. Shape turkey into a loaf or a football and place on baking sheet. Cook for 40 - 45 minutes. Add potatoes and/or vegetables to the sheet as well, if desired.
  6. *If you choose to cook in a loaf pan, drain any juices half way through cooking time so that the loaf will brown.
