Pre heat oven to 450.

Cut chicken thighs into 2 – 3-inch cubes.

In a small dish mix the vegetable oil, ground coriander, paprika, cumin, turmeric, oregano, salt, pepper, green onion and 2 TBSP chopped cilantro.

Mix marinade with the cut-up chicken and let rest on the counter for 15 minutes.

Meanwhile sliver lettuce and place on a large serving platter.

Mix Yogurt dressing ingredients and adjust seasonings. Add a little more lemon juice or vinegar if desired.

Add 1 TBSP lemon juice to the chicken and marinade just before placing in the oven. Mix to incorporate.

Place chicken pieces on a large baking sheet without crowding.

Cook in the oven for 15 minutes, flipping halfway.

Depending on the size of your chicken pieces, the chicken could be done after 15 minutes. If not continue to cook until clear juices run through.

Place chicken on the lettuce. Sprinkle tomatoes and drizzle with Yogurt Dressing and remaining cilantro.

Add lemon wedges and any extra dressing on the side with pitas or rice and hot sauce if desired.
