Smoked Salmon and Avocado

Perfect for lunch on a hot day! Lox and cream cheese has been a long - time favorite of ours. Garnished with capers, caper berries and avocado puts it in a category beyond a normal lunch. If you like capers, you will love caper berries. Capers are the pickled buds from the caper shrub. Caper berries are the pickled fruit of the bush and milder in flavor. Caper berries come with the stem still on.

Ingredients

  • Lox 0CH
  • Cream cheese 1 CHO/TBSP
  • Avocado ½ medium avocado 50 gr = 1 CHO
  • Lemon slices 0 CHO
  • Slivers of Red onion thinly sliced 0 CHO
  • Capers 0 CHO
  • Caper berries 10 caperberries/30 gr = 1 CHO

*Bagel or crackers of your choice – CHO dependent on product

Instructions

  1. Place everything on a plate and serve immediately.
  2. Sometimes for brunch we will replace the crackers with an open style omelet and then add the cream cheese, lox and garnishes.
