Rotel Tex Mex

Serve this quick Tex Mex over rice or with Taco chips and various accompaniments. Mild Rotel Tomatoes are available if you prefer a softer spiced dish.

Ingredients

  • 1 lb. (454 gr) ground beef, chicken or turkey 0 CHO
  • 1 TBSP olive oil 0 CHO
  • 1 – 9 oz can (284 ml) Rotel Original Tomatoes (4 CHO/1/2 cup/125 ml) 9 CHO
  • 1 cup (180 gr) black beans, rinsed and drained 18 CHO
  • 1 cup (263 gr) Tostados Medium Salsa (1CHO/2 TBSP) 8 CHO
  • ½ cup (55 gr) celery, diced 1 CHO
  • 1/3 cup (60 gr) jalapeno pepper, diced 5 CHO
  • 1 cup (112 gr) Cheddar Cheese, grated 0 CHO

TOTAL CHO 41 CHO

  • TOTAL GRAMS 1117 GRAMS
  • 41 CHO DIVIDED BY 1117 GRAMS = .036 CHO/GRAM
  • ½ CUP = 120 GRAMS (.036 CHO x 120 GRAMS) 4.32 CHO/1/2 CUP

Garnish with:

  • Sour Cream
  • Cilantro
  • Radish
  • Chives
  • Lime slices
  • Olives
  • Jalapeno pepper

Instructions

  1. Heat olive oil in a skillet. Add hamburger and break apart as it cooks.
  2. Add celery to hamburger. Add jalapeno now if you like the peppers soft. We prefer more crunch and add them after the hamburger has cooked and is drained.
  3. Drain cooked hamburger and return to the skillet.
  4. Add Rotel Tomatoes, salsa, and jalapeno pepper. Bring to a boil, reduce heat and simmer 20 minutes uncovered.
  5. Meanwhile heat broiler and move rack to second from the top.
  6. Add the black beans and stir to incorporate.
  7. Top with grated cheese and garnish with a little jalapeno pepper slices if left over.
  8. Broil for 10 minutes until golden.
  9. Serve immediately with garnishes, chips and/or rice.
