This dinner literally takes minutes to make once the grill is heated. Add a starch if you want. We usually start with a crisp salad, unless we’ve had a little cheese board.

Instructions
Pre heat grill to 450.
Meanwhile seed pepper and cut into 1/8’s. In a small bowl toss pepper slices with 1 TBSP olive oil and lightly salt and pepper.
Rub the remaining TBSP of olive oil over halibut steaks and lightly salt and pepper. Rub about half the lemon zest over the steaks.
The peppers will take longer to cook than the halibut.
Place peppers on a grill grate and cook for 4 minutes before placing halibut on the grate as well.
Peppers will take about 12 minutes to cook and the halibut 8 minutes (4 minutes per side).
Remove to serving platter and sprinkle remining lemon zest on halibut. And a sprinkle of fresh parsley.
