Granny Smith Baby Greens Salad

This salad does have a few more Carbs than others, but worth the treat. Serve family style or make up individual plates.

Belberry Royal Selection, Cameroon Mango vinegar is available at specialty shops. Cameroon (country in Central Africa) produces some of the best mangos in the world.

Salad

  • 6 cups Baby Greens 0 CHO
  • ½ medium (88 gr) Granny Smith apple 10 CHO
  • ¼ cup (40 gr) Dried Cranberries sweetened with apple juice 29 CHO
  • ¼ cup (25 gr) Pumpkin Seeds, unsalted .25 CHO
  • 1/3 cup (90 gr) Chevre 3 CHO

SALAD TOTAL CHO 42.25 CHO

  • 4 EQUAL SERVINGS = 10.5 CHO PER SERVING

Vinaigrette

  • ¼ cup olive oil 0 CHO
  • 2 TBSP Cameroon Mango Vinegar 6 CHO
  • ½ tsp. Dijon mustard 0 CHO
  • ½ tsp. (6 gr) honey 6 CHO
  • 2-3 grinds each salt and pepper 0 CHO

VINAIGRETTE TOTAL CHO 12 CHO

  • TOTAL WEIGHT 141 GRAMS
  • 12 CHO DIVIDED BY 141 GRAMS = .085 CHO/GRAM
  • 1 TBSP = 12 GRAMS (.085 CHO x 12 GRAMS) 1 CHO/TBSP
  • 12 TBSP DIVIDED BY 4 SERVINGS = 3 CHO PER SERVING

SALAD AND VINAIGRETTE TOTAL CHO 54.25 CHO

  • 4 EQUAL SERVINGS = 13.5 CHO PER SERVING

Instructions

  1. Mix vinaigrette ingredients in a small bowl and whisk to incorporate.
  2. Cut apple into bite size pieces just prior to serving.
  3. Place baby greens on the serving dish and toss with the dressing. Next add the apple and cranberries and toss again.
  4. Top with pumpkin seeds and Chevre cheese.
  5. Serve immediately.
