Chili Con Carne

There are as many versions of Chili as there are cooks and families. Use Pacific Creamy Tomato Soup or Tomato Sauce, both are Gluten Free. The CHO changes marginally using Tomato Sauce. Add the spice, more or less as you wish; and/or serve with hot sauces on the side.

This is our very child friendly version, cayenne is optional.

Ingredients

  • 1 lb. hamburger
  • 1 TBSP olive oil
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ cup (60 gr) red onion 5 CHO
  • 1 cup (120 gr) red/orange pepper 6 CHO
  • 1 cup (110 gr) celery 2 CHO
  • 2 TBSP (22 gr) jalapeno, seeded and diced 1 CHO
  • 19 oz. can (540 ml) Primo Kidney Beans (rinsed 353 gr) 36 CHO
  • 14 oz (398 ml) diced tomatoes (5 CHO/1/2 cup/125 ml) 16 CHO
  • 1.5 cups Pacific Creamy Tomato Soup (16 CHO/1 cup/250 ml) 24 CHO
  • 1 TBSP chili powder
  • ½ tsp cumin
  • ¼ tsp cayenne

TOTAL CHO = 90 CHO

  • TOTAL WEIGHT 1423 GRAMS
  • 90 CHO DIVIDED BY 1423 GRAMS = .063 CHO/GRAM
  • ½ CUP = 123 GRAMS (.063 CHO x 123 GRAMS) 7.74 CHO/1/2 CUP

TOMATO SAUCE:

TOTAL CHO = 81 CHO

  • TOTAL WEIGHT 1423 GRAMS
  • 81 CHO DIVIDED BY 1423 GRAMS= .056 CHO/GRAM
  • ½ CUP = 123 GRAMS (.056 CHO x 123 GRAMS) 6.88 CHO/1/2 CUP

Instructions

  1. Pre heat oven to 325.

  2. Heat olive oil in Dutch Oven. Add hamburger, salt, pepper and chopped onion. Scramble fry hamburger until cooked through. Drain in a sieve and return hamburger/onion to the Dutch Oven.

  3. Meanwhile, drain and rinse kidney beans, chop peppers and celery. (seed Jalapeno by cutting in half lengthwise and with a teaspoon remove seeds and white membrane).
  4. Add all remaining ingredients to the Dutch Oven, stir, cover and cook for 1 hr and 20 minutes.

  5. Remove Chili from the oven, take the lid off and let rest for 5 – 10 minutes before serving.
