Limoncello (lee-mon-CHAY-low) is a lemon - flavoured liqueur from Italy’s Amalfi coast, and possibly Mike’s favourite liqueur. It is traditionally served after a meal, ice cold, and stored in the freezer. The first time we had Limoncello was in Rome, compliments of the Chef. That led to another round for the group and dessert! Smart Chef.

Ingredients
1cup(120 gr) fresh raspberries 6 CHO
1cup(137 gr) fresh blueberries. 17 CHO
2TBSP(1 oz) Limoncello 11 CHO
Fresh mint for garnish if desired
TOTAL CHO 34 CHO
Divide fruit into 4 portions and serve 8.5 CHO each
(30 gr raspberries and 34 gr blueberries)
Instructions
Combine all ingredients except mint. Let sit for 20 minutes in a flat dish. Garnish with a mint leaf or two if desired.
*Mint grows like a weed so it’s easy to have on hand, however, we were away this spring for a few weeks and our potted plant never made it. It sells out quickly at the garden stores but is usually available at the market. A great summer herb to have on hand.
