Chocolate Mousse
This mousse is creamy, thick and tastes of rich chocolate. Garnish with cream, berries or both.

Place semi sweet chocolate chips in a medium bowl and set aside.

Heat 1 cup cream and salt in a small saucepan to almost the point of boiling, hot but not boiling.

Pour hot cream over chips and let rest for 2 minutes. Then whisk until incorporated and smooth. Let cool completely.

Next in a large bowl whip remaining 2 cups of cream until it forms stiff peaks.

Add about 1/3 of the chocolate mixture and gently fold in until incorporated. Repeat 2 more times with remaining chocolate.

Place in desired serving cups and refrigerate at least 4 – 6 hours or preferably overnight.
