A burst of summer for lunch or a light dinner comes together in minutes after a hot morning or day at the beach, with sun kissed tomatoes.
A sharp Cheddar cheese complements the sweet tomatoes. Serve with salad or a light soup if you want.
Tomato and Cheese Toasts
It’s up to you whether you grill the tomatoes or add them fresh after the cheese has bubbled. Cooked tomatoes do taste different from fresh.
Use a good mayonnaise such as Hellman’s Real Mayo, not a Miracle Whip product.
Add black pepper, chopped onions, jalapenos, pepperoncini, olives, basil, parsley or to the mayo and cheese if you want.
The beauty of these cheese toasts is that everyone can make their own.

Ingredients
- Tomato/es thinly sliced
- 1/4 cup (52 gr) Hellman’s Real Mayonnaise
- 3 TBSP (52 gr) cheddar cheese, grated
- *BREAD OF YOUR CHOICE
Instructions
- Pre heat broiler and move rack to top 1/3 of oven.
Grate cheese and mix with mayonnaise (about equal amounts of each).
- Add any condiments you want.
- Toast bread in the broiler or toaster.
- Spread mayo/cheese mixture on the toasted bread and add tomatoes if grilling. If not, add them after the cheese toasts grill.
- Broil until cheese is bubbling and starting to brown.
- Garnish as desired and dig in!
